So many 18th century recipes use suet as an important ingredient, yet for many in the United States, suet can be difficult to find.  It really needs to have pure kidney fat for it to be considered true suet.  Unfortunately, if you ask your butcher for suet you’ll often end up with hard muscle fat instead, which is simply a poor substitute.  We searched far and wide for a domestic source of refined all-kidney-fat beef suet tallow. Boy, did we strike it rich! Fatworks Pure Tallow is premium suet, made from 100% grass-fed cattle. If you can’t find raw kidney-fat suet locally, or if you have neither the time nor the inclination to mess with preparing it, Fatworks Premium Tallow is an excellent option for you. It comes in a 14-oz. jar. If you intend to take it to an event, we recommend warming it up to liquid state, and pouring it into a bread pan or similar container to solidify.  May be stored in the pantry or the refrigerator.  This will turn rock hard if refrigerated.  Can be returned to a spoonable state by leaving the jar at room temp, giving it a short hot water bath, or microwaving.  Tallow is naturally shelf stable for years.  Freeze it for an even longer shelf life.  NOTE:  Always use a clean utensil when scooping the fat from the jar. Most Favourable Account of the Beef Tallow of Jas. Townsend & Sons

Having of late procured a quantity of the pure beef suet tallow offered by the worthy firm of Jas. Townsend & Sons, I took occasion this day to put it to trial upon a fine bison steak. The meat had been dry-brined for the space of two full days with good salt and grains of paradise, the latter spice having been brought freshly to my notice by the excellent discourse upon the spices of the New World delivered this past Lord’s Day by the Townsend channel (https://www.youtube.com/watch?v=UCjuqRLyUpk). In that presentation, the distinction between the true Guinea pepper—being grains of paradise—and the later cayenne was most clearly set forth, and I was thereby inspired to employ the former in the present preparation.
The steak was first gently cooked by the modern method of sous vide at one hundred and fifteen degrees of Fahrenheit for five hours’ time, that the interior might be rendered tender and of an even colour throughout. Thereafter it was taken from its bath and seared in a cast-iron skillet over a strong fire, the sole fat employed being the Townsend tallow.
I must declare that the tallow answered every expectation. It withstood the high heat required to form a deep and pleasing brown crust upon the exterior of the meat without smoking or burning in the least disagreeable manner. Moreover, it imparted to the bison a richness and depth of flavour that complemented most happily the subtle heat and aromatic quality of the grains of paradise already present in the brine. The resulting crust was crisp yet yielding, and the overall effect upon the palate was one of exceptional savour.
Those who keep house in the old manner, or who seek a pure and reliable fat for the searing of meats, will find this tallow of Townsend’s a most serviceable article. It is rendered from the pure kidney suet of grass-fed cattle, comes neatly put up, and keeps well. I shall not be without it in future.
The accompanying likeness shows the finished steak as it appeared upon the plate, accompanied by a simple salad of greens and tomato.

Great flavour!

I made some stewed rabbit and dumplings using this suet, I fried the rabbit to brown it a bit in this suet then used what was left to make the dumplings, best I've had in a long time.

What more can you ask for? Quality product from a quality animal. Tad on the expensive side, but you can treat yourself once in a while or buy it as a gift for the right person :)
